1. Cook the lentils until soft then drain
  2. Finely chop the onions, garlic, and chilli
  3. Heat the oil and butter in a large saucepan until it's really hot
  4. Add all the spices to the pan and cook for a minute
  5. Add the onion and garlic and cook for another minute
  6. Add the lentils, chilli and stock and cook for 15 minutes
  7. Add the cream then leave to simmer for a good hour (keep an eye out for it getting too dry)
  8. Season and serve with rice
